Water data and KPIs can be used to identify priority hotspots that contribute the most to water consumption and wastewater strength – and highlight opportunities for improvement.

Having detailed data can also provide insights into how business growth will impact water use and wastewater generation.

The information is also an important resource to make available to engineering consultants and/or solution providers when a brewery is considering wastewater treatment approaches.

How to Use the Collected Information and KPI’s to Prioritize Areas for Improvement

Don’t focus on the strength of the wastewater leaving the facility – it is a symptom and not a root cause to be addressed

Priority areas can be broken down as follows:

  • Greatest cumulative load or quantity of ‘stuff’ per event (an example could be, total generated monthly spent yeast being sent to drain)
  • Greatest cumulative water volume used per event (an example could be, total water used monthly for cleaning brewhouse)
  • Consider both production and cleaning
Root Cause Calculation Example

Below is a short walk through of an example from an Ontario Craft Brewer:

Situation: During canning approximately 200 L of beer is going to drain during the day due to packaging losses. The question being explored is whether this is a meaningful contributor to wastewater strength or not.

Canning Line

CALCULATION:

  • Based on lab analysis of beer, a reasonable estimate of BOD strength of  beer is approximately 100,000 mg/L BOD.
  • This means that the total BOD load going to drain over the day is determined as follows:
    • beer volume x beer BOD = Total BOD load
    • 200L x 100,000 mg/L = 20,000,000 mg
  • Using the brewery baseline data, the average estimated daily wastewater volume is 22,000 L per day.
  • To get an average wastewater impact from the packaging beer losses,
    • Total BOD load / Average daily wastewater volume = Packaging Beer Loss Impact
    • 20,000,000 mg / 22,000 L = 909 mg/L

With a discharge limit of 300 mg/L BOD, this estimate is well over the discharge limit and is all due to just the beer losses in packaging.
